I'm not sure I can handle one more "hot tip" about meat here in Texas. Lets just say meat...it's a big deal here!! And in Charlie's never ending quest to find the finest beef that Texas has to offer we have been to some, shall we say, interesting places (umm gas stations..).
A few weeks ago Charlie and I were heading to the commissary on base and we took a detour to Castroville, TX on a "hot tip" about this place....

Charlie had heard about this place at a retirement/farewell luncheon with some coworkers the week before. If you live here you know Castroville is kind of a hike just for steak...and if you know Charlie, then you know it really isn't too far to drive at all.
Castroville is the "Little Alsace of Texas." It's a small town settled in 1844 by Henri Castro and some colonists from Alsace, France. It's a sleepy little town, as far as I could see, but the meat market was clean, the people friendly, and the assortment of meat...well worth the trip.

Yes, it really was that good!!!
